Niki Segnit, author of best-selling The Flavour Thesaurus, talks to Sheila Dillon, presenter of Radio 4’s The Food Programme, about her ground-breaking new book, Lateral Cooking, a book for where to start if you want to learn to cook by heart. Niki shows us how learning one recipe can unlock many more. So, under ‘Bread’, we learn that flatbreads, oatcakes, buckwheat noodles, chapattis and tortillas are all variations on one theme. A few simple tweaks and you can make soda bread, scones or cobbler. This is a great opportunity to enjoy Niki’s special blend of culinary science, food history, chefs’ wisdom and humorous personal anecdotes about the pleasures and perils of cooking.
